In my My New Year’s Resolutions post, I said I wanted to pack my lunch for work, in efforts to eat cleaner and save some $$. Along with that, I really want to cook more. In my opinion, cooking at home is healthier because you can control what goes into your meal. But it also just feels better. In all honestly, where do my calories and moolah go most frequently when it comes to food?
Brunch.
Brunch is literally the best thing ever. It’s not only the savory and sweet mix of dishes, but also the experience of spending a leisurely morning and afternoon with your main man or girlfriends.
I tried this dish from Chrissy Teigen’s cookbook Cravings, and it is so delicious. I love red sauce (what I call tomato sauce) and B and I ate it right out of the skillet, with a nice loaf of focaccia bread to soak up all the goodness. I hate measurements, and I hate complicated ingredients. This dish is foolproof, and I am going to adapt it from Chrissy’s original recipe, to show that you can simply grab a few things and throw it together for an effortless crowd pleaser.
Spicy Tomato Skillet Eggs
For 2 people (simply adjust the number of eggs for more people or if you want a single serving)
Ingredients
Crusty bread, for dipping
Instructions
1. In a large skillet, combine the tomato sauce and red pepper flakes. Cook the sauce over medium-high heat until it just begins to boil. Be careful – our cast iron heated the sauce so quickly and it started bubbling like crazy!
2. Form a well for each egg in the sauce with the back of a large spoon. Crack one egg into each well. Salt and pepper the eggs and sauce.
3. Reduce the heat to medium and cook the eggs until they are what you desire. We like ours with a runny yolk, but keep in mind that the sauce is hot and will keep cooking the egg even after you remove it from the heat.
5. Once the eggs are at the desired consistency, remove the skillet from the stove, drizzle olive oil all over the eggs and sauce, and sprinkle on the fresh oregano and parmesan cheese. Serve with the crusty bread.
